TERRASSES DU LARZAC
Proud child of its land, Clas Mani expresses the essence of the terroir of the Terrasses du Larzac. Intense and uncompromising, this wine represents our devotion to sublimating the identity of a unique terroir. Each plot is hand-harvested, sorted and vinified separately to best preserve the original fruit. Two and a half years of aging in Chassin barrels is necessary to unveil all the depth and brightness of Clas Mani.
TERROIR - SOIL - EXPOSITION - YIELD
Clas Mani is a jewel. From rigorous plot selection to all-year-long meticulous work on the plants, nothing has been left to chance, all has been chiseled to measure depending on the evolution of each plant. Mainly planted with Syrah, the plots are exposed on a SSW axi. This way the grapes benefit from both a gentle morning sun and end of afternoon light. The strong temperature amplitude between day and night give this cuvée an unprecedented freshness. The soil is made of sandstone which rapidly drains the rain. Our vines are subjected to high hydric stress which in turn results in low yields and concentrated berries which are the ultimate expression of the richness of this terroir.
Aging : 18 months in new barrels (Chassin cooper)
Advised serving temperature : 18°C. Open the bottle 2 to 9 hours before drinking. Optimal time for consumption is after 7 to 10 years in your cellar.
